Crayfish Recipes

Parmesan Crust Crayfish



  • 80g Cooked Crayfish tails
  • 1 Zest of a lemon (grated)
  • 55g Parmesan cheese (finely grated)
  • 1 Egg (beaten)
  • 2 Tbsp Parsely (chopped)
  • 55g Breadcrumbs
  • 1 Lemon (in wedges) - for serving
  • Garlic mayonnaise - for serving

Cooking Directions

  1. Preheat the oven to 210c (Gas mark 7)
  2. Roll the crayfish in the beaten egg, ensuring a good covering.
  3. Mix together the lemon zest, the Parmesan cheese, parsely and breadcrumbs, roll the crayfish in the mixture, ensure that each tail has an even coating.
  4. Arrange the crayfish in a single layer onto a baking tray.
  5. Put into the oven for around 8 - 10 mins, or until the crumb is golden brown and the crayfish is piping hot all the way through.
  6. Put the Crayfish into a serving dish, and serve with the lemon wedges and garlic mayonnaise.

Crayfish & Rocket Saffron Tagliatelle



  • 400g Basic pasta dough
  • 2 tbsp Oil
  • 1/2 tsp Saffron threads
  • 1 Chopped mild red chilli
  • 300g Cooked Crayfish tails
  • 500g Halved cherry tomatoes
  • 1 Lemon

Cooking Directions

  1. Soak the saffron threads in 2 tsp of boiling water for 30 mins.
  2. Strain the saffron liquid and add to the pasta dough.
  3. Roll out the dough and cut into tagliatelle, boil for 2 - 3 minutes then drain and set aside.
  4. Heat the oil in a pan and add the chilli and cherry tomatoes, cook for 3
  5. minutes.
  6. Stir in the juice of the lemon and add the crayfish tails, cook until the
  7. crayfish is hot all the way through.
  8. Toss in the pasta, add some wild rocket to taste and serve.

Spicy Thai Crayfish Salad



  • 540g Cooked Crayfish tails
  • 1 Lime - juice & grated zest
  • 1 tbsp Olive oil
  • 1 - 2 tbsp Red thai curry paste (dependant on taste)
  • 1 Tin Coconut milk
  • 5 tbsp Soured cream
  • 2 tbsp Coriander - chopped
  • 300g Sugar snap peas
  • 200g Halved baby corn
  • 2 Red peppers - deseeded and diced
  • Salt & Pepper

Cooking Directions

  1. Place the crayfish into a bowl & sprinkle with the zest & juice of the
  2. lime, season with salt & pepper to taste. Cover and put into the fridge for
  3. 15 mins, or until required.
  4. Heat the oil in a large casserole dish, add the curry paste and stir over a
  5. low heat for 2 - 3 mins. Add the coconut milk, brink to the boil and
  6. simmer for 3 mins. Transfer into a bowl and leave until completely
  7. cooled.
  8. Once cold stir in the sour cream and coriander, season well.
  9. Blanch the sugar snap peas & baby corn in lots of salted boiling water for
  10. 1 - 2 minutes. Drain & refresh under cold running water, then leave to cool.
  11. Toss the vegetables, red pepper and dressing into the crayfish and serve.

Crayfish Chowder



  • 360g Cooked Crayfish tails
  • 6 rashers Unsmoked streaky bacon, diced
  • 45g Butter
  • 2 tbsp Flour
  • 2 Leeks, finely diced
  • 2 Potatoes, peeled & diced
  • 5 tbsp Single cream
  • 500ml Milk
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Parsley, chopped
  • Salt & Pepper

Cooking Directions

  1. Lightly season the Crayfish and chill until required.
  2. Fry the bacon in a large casserole dish over a low heat until it begins to frazzle.
  3. Add the butter, potatoes and leeks and continue to cook over a low heat for about 6 - 8 mins or until they begin to soften.
  4. Stir in the flour and continue to cook for a further 2 mins.
  5. Blend in the milk and cook over a low heat for 25 - 30 mins or until the potatoes are completely soft. Do not allow the mixture to boil rapidly.
